Cheese and wine from Québec...

Advices from our experts...

Cheese degustation is really simple; not more than 4 services of approximately 3 or 4 cheeses. This choice is necessary to make sure taht everyone can appreciate each cheeses with wine taste. Calculate around 200g of cheese per person half a bottle of wine.Vin et Fromage

It is always tastefull to mix cheese and bread, crackers, fresh fruits and nuts. For the bleu cheese, why not mixing it with dark chocolate? It will bring you a new tasting experience with our quebequer cheeses.

  • 2e - Clos Napierois, Napierville.
  • 3e - Réserve du Vigneron, Iberville.
  • 4e - Été Indien, Saint-Joseph du Lac (de type madère et ou porto).

Visual aspect

To begin, spin a little bit of wine into the wine glass to have a look at it color wich help to know what kind of raisins the wine is made of.Then, have a look at the tears; the slides on the glass. It gives a good idea about the alcool's quatity and glycerin into the wine. Few sildes means a skinny wine and long slides means a fat wine.

Notice: Those informations do not mean that the wine is good or bad, it is just some criterias to keep in mind while you are evaluating a wine

The Nose
Let spin the wine again, this time to let some oxygen get iinto the wine. Put your nose into the glass and inhale deeply while trying to identify known smells. Take a second inhale to discover other smells.

Notice: Do not try to find to many perfumes because it can disturb your smell sens for the next wines.

 

Taste
It is not your tongue that helps you anilyse a wine as much pas your palate. Tongue only taste sweet, salty, acid and bitter. Palate ihelps develop flavor. Take a wine sip and make it spin into your mouth while you are letting air coming in wich will help diffusing flavors of the wine. Flavors are in categories: floral, fruity, vegetal, herby, spicy and others. Here we are trying to put the wine into a category. That is the final aspect of the evaluation.

Notice: Remember that the real standar to the wine that your are drinking is your own taste and appreciation. It is only this way that you will really enjoy your wine experience.
